Ingredients:

  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon sugar

Spice Paste:
  • 6 dried red chilies, soaked in hot water and deseeded
  • 8 shallots
  • 4 cloves of garlic
  • 2 teaspoons turmeric powder
  • 1 teaspoon coriander seeds
  • 1 teaspoon cumin seeds

Instructions:
  1. In a blender or food processor, combine the spice paste ingredients and blend until you achieve a smooth consistency.
  2. Heat the cooking oil in a large pot or Dutch oven over medium heat. Add the minced garlic, chopped shallots, and sliced red chilies. Sauté until fragrant and the shallots become translucent.
  3. Add the spice paste to the pot and continue to cook, stirring frequently, for about 5 minutes until the aroma intensifies.
