  • 500 grams boneless chicken thighs, cut into small cubes
  • 2 tablespoons vegetable oil
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons soy sauce
  • 2 tablespoons freshly squeezed lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon brown sugar
  • Wooden skewers, soaked in water

For the peanut sauce:
  • 150 grams roasted peanuts, finely ground
  • 3 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons soy sauce
  • 1 tablespoon tamarind paste
  • 2 cloves garlic, minced
  • 1 shallot, minced
  • 1 teaspoon chili powder (optional)
  • 200 ml water

  1. In a bowl, combine vegetable oil, sweet soy sauce, soy sauce, lime juice, minced garlic, ground coriander, ground cumin, turmeric powder, and brown sugar. Mix well to create the marinade.
  2. Add the chicken cubes to the marinade and toss until they are evenly coated. Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 1 hour or overnight for better flavor.
  3. Meanwhile, prepare the peanut sauce. In a saucepan, heat a little vegetable oil over medium heat. Add minced garlic and shallot, and sauté until fragrant and golden brown.
  4. Add the ground peanuts, sweet soy sauce, soy sauce, tamarind paste, chili powder (if using), and water to the saucepan. Stir well to combine all the ingredients. Simmer the sauce over low heat for about 10-15 minutes, stirring occasionally, until it thickens. Remove from heat and set aside.
  5. Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken onto the soaked wooden skewers, leaving a little space between each piece.
  6. Grill the chicken skewers for about 2-3 minutes on each side, or until they are cooked through and slightly charred. Baste the skewers with the remaining marinade while grilling for extra flavor.
  7. Once the chicken satay is cooked, remove them from the grill and serve hot with the prepared peanut sauce on the side. You can garnish it with some chopped peanuts and sliced cucumbers, if desired.

Chicken satay is best enjoyed when it's fresh off the grill. The combination of juicy and tender chicken with the aromatic spices and the rich peanut sauce creates a delightful burst of flavors. Whether you're hosting a party or simply craving a delicious snack, this chicken satay recipe is sure to impress your taste buds and satisfy your appetite.
